Continuing on my stew saga, here is a green stew’p. I love this combination for many reasons, but the main reason is that the vegetables and the paste used to make is green.

I love how this turned out to be an extremely green soup.

Green Stew


Ingredients

  • Pressure cook 1/2 Cup of channa dhaal
  • Zucchini, chopped, 1/2 Cup
  • Lima Beans – 1/4 Cup
  • Chayote  – 1/2 Cup
  • Tamarind Paste – 1 tsp
  • Shredded fresh / frozen coconut – 3 tbsp
  • Salt and asafetida

Grind to a paste

  • Green chillies – 3
  • Cilantro – a bunch
  • Mint – 3 sprigs
  • Coriander leaves – 4 sprigs
  • Ginger paste – 3 Tbsp

Putting it together

  • With a little bit of oil on a heavy bottomed pan, put in zucchini , chayote and lima beans
  • Add salt as needed and sauté it
  • Add reminder of the ingredients, coconut, tamarind paste, ground paste, boiled channa dhaal to the vegetables
  • Add a cup or more of water (as thin or thick as you want) and let it simmer
  • Cook for about 10 to 15 minutes until the stew’p boils in to perfection
  • Remove from fire and garnish with Ghee

Note : The green paste can be made in bulk and refrigerated. It can be used for a wide variety of dishes from pilafs to stir fries
