Lemon Rice Noodles - எலுமிச்சம்பழ சேவை


  • Dry Rice noodles – For two servings
  • 1 tsp Turmeric powder
  • 1 tsp asafetida
  • 1 tsp Mustard seeds
  • 1 tbsp Channa dhal (Lentil)
  • 1 tbsp split Urad dhal
  • 2 Green chillies – cut in to pieces
  • 1 tsp ground ginger
  • Oil for seasoning
  • Salt to taste
  • Curry Leaves
  • Juice of 1 Lime
  • Cilantro – Optional

Putting it together

  • Bring a pot of Water to boil
  • Turn off the heat, and add the dry rice noodles to the pot. Let it sit and rehydrate
  • Drain the noodles and keep aside
  • In a large pan or wok, add oil
  • When hot, add mustard seeds and let it sputter
  • Then add Channa dhal, urad dhal, ginger, green chillies
  • When the dhal turns golden brown, turn off the heat
  • Add turmeric powder, asafetida, salt, curry leaves and let it soak the heat from the pan
  • Add the Rice noodles, Lemon juice to the Wok and mix with the seasoning thoroughly
  • Garnish with Cilantro if required

Some Twists

  • You could sauté some tomatoes before adding turmeric.
  • You could also use some Nuts (Peanuts, Cashew) along with channa dhal to give it a crunch

Best served hot with a side of Cocunut chutney or Sambhar (Lentil soup)
