I had to host a meeting at work. Since everybody knew I loved cooking they insisted I make something. Well, us foodies do not need any excuse to cook. Especially when there is a big audience. I had to leave for the meeting at 6 AM in the morning, so I wanted to make something the previous day that would be nice the next day, plus that was an appetizer so that it was easy to eat. The best thing I could think of was potato puffs.Potato puffs are a common snack in India that has potato filling inside a puff pastry shell. It crisps up nicely in the microwave. I had made 36 puffs, 9 from each of the puff pastry. You can fill this with any filling you like, not just potatoes. Enjoy!

Ingredients

(This makes 9 puffs)

  • Puff Pastry –  1 Sheet
  • Medium Sized Potatoes – 3
  • Carrot – 2 – Diced
  • Medium Onion – 1
  • Ginger paste – 1 tsp
  • Green Peas – 1/4 Cup
  • Turmeric Powder – 1 tsp
  • Chilli powder – 1 tsp

Putting It Together

  • In pot of water boil the potatoes and mash them
  • In a pan sauté some onions
  • Once the onion browns, add ginger paste, peas, and carrot
  • After the vegetables fry, add the potatoes, salt, turmeric and chill powder
  • Sprinkle some water and let the mixture sauté well
  • If it appears to get dry, add some more water until it cooks
  • Do not add too much water, otherwise it will get mushy
  • Thaw the puff pastry according to package instructions
  • Divide them in to 9 equal squares, fill a cup of water
  • Fill the squares in the middle with filling
  • With some water paint the four sides of the pastry with water so that it becomes sticky
  • Fold over one corner over the opposite corner, so that it forms a triangle
  • Press down on the sides gently, do not squish otherwise the pastry wouldn’t puff
  • Bake as per instructions in the puff pastry box, or until golden brown
  • Its best served hot with ketchup or mint chutney
