You probably have dozen and dozens of recipes out there that tell you how to make the perfect roti. I do not want to tell you too. But what I can tell you is, it takes a bit of practice to get the perfect little puffed one. The trick is to make the dough soft, but not squishy, roll it out evenly , make it small not as big as a plate. Then you put it on the grilled just enough for it to get ever so lightly brown and then you finish it off in the flame. Here are some pictures that I took when I did mine. I will also tell you, its tricky to photograph it, when its just about rightly puffed!! Enjoy!
