Schezwan Piccolini Stir fry

Ingredients

  • Piccolini mini wheels – 2 servings
  • Veggies
    • Carrot – sliced
    • Baby snap peas sliced
    • Potatoes sliced
    • Beans sliced
    • Baby Corn sliced
    • 2 Green chillies cut lengthwise
    • Onions sliced
    • Ginger paste – 1 tsp
    • Garlic paste – 1 tsp – if required
    • Tomato sauce  – 3 tsp
    • Soy sauce – 3 tsp
    • Sriracha / Hot Sauce – 1 tbsp
    • Chilli powder – 1 tsp
    • salt to taste
    • Oil as required

Putting it to gather

  • In a Pan / wok, put in a little oil
  • Add green chillies, ginger, garlic
  • Add the onions and fry till brown
  • Add rest of the veggies and sauté them till they get a char on them
  • Add salt, chilli powder, tomato sauce, soy sauce, Sriracha and fry till the raw smell of soy sauce disappears.
  • Bring a large pot of water to boil. Add the mini wheels, and add generous amount of sal (say 2 heaped tbsp)
  • Once the pasta is cooked to the point, it has a little bite to it, drain and rest it.
  • In the veggies, add 2 tbsp oil and add the pasta to it.
  • Mix well and allow pasta to cook fully in the sauce
  • Leave the pasta a bit to get a sear at the bottom
  • Remove and serve with cheese is required
