Once again, the awesome people at Tuttorosso tomatoes sent me a big gift pack with yummy tomatoes. As mentioned earlier, I love their whole peeled tomatoes. This time, mom made a a spicy tomato chutney that paired perfectly with thick cut wheat bread and mashed indian style potatoes. Enjoy!

Potato Cucumber Sandwich

Tomato Chutney

Ingredients

  •  1 can tuttorosso tomatoes peeled plum tomatoes
  • 1 cup oil
  • 2 tbsp chilli powder
  • 1 tsp turmeric powder
  • salt to taste

Putting It Together

  • Gently crushed and coarse blend the plum tomatoes in a food processor
  • In a pan put in half a cup of oil and simmer the tomatoes until cooked (takes about 20 mins)
  • Add in the salt, chilli powder, turmeric powder and 1/4 cup of the oil
  • Cook until the oil comes out of the tomatoes
  • Add the remaining 1/4 cup oil to mix in and serve

Potato Cucumber Sandwich

Ingredients

  • Thick cut whole wheat bread
  • Yellow yukon potatoes
  • 1 tsp Mustard Seeds and a bit of oil
  • 1 tsp chilli powder
  • 1 tsp turmeric powder
  • Salt to taste
  • Sliced cucumbers

Putting It Together

  • Boil and peel the potatoes
  • Add the chilli, turmeric powder along with salt and coarse mash the potatoes
  • In a pan, sputter some mustard seeds in oil. Add in the potatoes and saute for a min
  • Spread the tomato chutney on both sides of the bread
  • Top one side with potatoes and top that with sliced cucumbers
  • Assemble the sandwich and enjoy!
  • If you want to eat hot, you can throw this in a sandwich maker
  • This keeps well for lunch without toasting.
