Last summer when we bought out grill, we used it sparsely. After the first couple of times, it just sat there gathering dust. I mean, how many times can you grill a burger and eat it with bread? But this summer I decided that I would grill often and try to innovate. Hence the Grillin-Sunday was born. Us and our neighbor get together to grill on our patio. It just started on a whim, but now its been going strong for 3 weeks now. Here is the recipe that triggered it all. I remember seeing this recipe on a facebook health webpage. It was the perfect recipe to start the Grillin-Sunday. Enjoy!

  • Zuchhini and Squash – Each will make two pizzas
  • Tomatoes – Halved and sliced
  • Melty cheese – I used pepper jacks
  • Bread crumbs
  • Marinara / Pizza Sauce – Home made / Store bought

For the Pizza Sauce

  • Can of crushed tomatoes – No Salt Added
  • Turmeric – 1 Tsp
  • Chilli powder – 1 Tsp
  • Salt to Taste

Putting It Together

  • In a pan, combine all the ingredients and let them stew in medium heat until its cooked thoroughly
  • Cut the zuchhini and squash in halves
  • Brush them with oil and grill them with cut side down just until the grill marks show up
  • Top the cut side with pizza sauce, add the cheese, top it with tomatoes and sprinkle bread crumbs on top
  • Now arrange them on the grill so that the curvy part sits between the grill grates. This way they would not tip over
  • Cover the grill top and cook just until the cheese melts
  • It can get a little tricky getting them out and on to the plate.I use a long grill longs and spatula to move them to a plate that my husband was holding

Note : I should have taken the picture with the salad but I was way too hungry to do that.
